Bourbon Maple Glazed Salmon on a Log
Serves 6Ingredients
- 1 each 6 x 12 x1 inch Cedar or Apple or Hickory Wood plank (available on-line, Target or Hardware stores)
- Olive oil
- 1 cup Log Cabin All Natural Syrup
- ½ cup Bourbon Whiskey
- ¼ cup finely chopped Red Onions
- 1 tablespoon finely chopped fresh Dill
- ½ teaspoon ground Black Pepper
- ½ teaspoon Kosher Salt
- 2 tablespoons unsalted Butter
- 6 each 4 ounce Salmon Filets
Directions
Soak the wood plank in water overnight or at least 8 hours before using it. Pre-heat grill to a medium heat. Place plank on grill rack over high heat, grill for 5 minutes or until lightly charred. Carefully turn plank over, move to cool side of grill. In a small sauce pan combine Log Cabin All Natural Syrup, Bourbon and Onions. Cook and reduce mixture over high heat while stirring until mixture turns thicker (like a thick glaze), than the syrup itself. Whisk in the Butter and Dill. Keep glaze warm. With a pastry brush, lightly brush Salmon with the warm glaze. Sprinkle Salt and Pepper over Salmon .Brush charred side of plank with Olive Oil. Place Fish fillets, skin side down on charred side of plank. Put grill cover down and grill for 12-15 minutes or until fish flakes easily when pried with a fork. Remove plank from grill. With a metal spatula, carefully remove and plate the Salmon. Ladle the remaining glaze over the individual Salmon fillets.
